- 2 cups shredded zucchini
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 2 large eggs
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup oil for frying
Instructions
- Place shredded zucchini in a bowl, sprinkle with salt, and let sit for 10 minutes.
- After 10 minutes, squeeze the zucchini to remove excess moisture.
- In a large bowl, combine the zucchini, flour, cheese, green onions, eggs, pepper, garlic powder, and onion powder.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the pan, flattening slightly.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove from the pan and drain on paper towels.
- Serve warm.
Notes
- For extra crunch, you can add cornmeal to the mixture.
- These fritters can be made ahead and reheated in the oven.
