Deliciously crispy zucchini fritters that are perfect as a snack or a side dish.

Ingredients

  • 2 cups shredded zucchini
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 2 large eggs
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup oil for frying

Instructions

  1. Place shredded zucchini in a bowl, sprinkle with salt, and let sit for 10 minutes.
  2. After 10 minutes, squeeze the zucchini to remove excess moisture.
  3. In a large bowl, combine the zucchini, flour, cheese, green onions, eggs, pepper, garlic powder, and onion powder.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the mixture into the pan, flattening slightly.
  6. Fry until golden brown on both sides, about 3-4 minutes per side.
  7. Remove from the pan and drain on paper towels.
  8. Serve warm.

Notes

  • For extra crunch, you can add cornmeal to the mixture.
  • These fritters can be made ahead and reheated in the oven.
