Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the wild boar shoulder with salt, pepper, and thyme.
  3. In a large Dutch oven, melt the lard over medium heat and add garlic.
  4. Once garlic is fragrant, add the wild boar shoulder and ensure it’s fully submerged in lard.
  5. Cover and transfer to the oven, cooking for 4-5 hours until tender.
  6. Let it cool, then store in the refrigerator until ready to serve.
