- 1 whole fish (such as trout or snapper)
- 2 cups animal fat (such as lard or duck fat)
- 2 tablespoons sea salt
- 1 tablespoon black pepper
- 1 lemon (sliced)
- Fresh herbs (such as dill or parsley)
Instructions
- Preheat your oven to 375°F (190°C).
- Clean the fish and pat it dry.
- Season the fish with sea salt and black pepper, both inside and out.
- Stuff the cavity of the fish with lemon slices and fresh herbs.
- In a large oven-safe skillet, melt the animal fat over medium heat.
- Once the fat is hot, carefully place the fish into the skillet.
- Roast the fish in the oven for about 25-30 minutes, or until the flesh is opaque and flakes easily.
- Remove the fish from the oven and let it rest for a few minutes before serving.
