Delicious and healthy vegetarian meatballs made with lentils, perfect for pasta or as a snack.

Ingredients

  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped parsley
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mash the cooked lentils with a fork or potato masher.
  3. Add breadcrumbs, parmesan, egg, garlic, Italian seasoning, salt, pepper, and parsley. Mix until well combined.
  4. Form the mixture into meatballs and place them on a baking sheet.
  5. Drizzle with olive oil and bake for 20-25 minutes until golden.
  6. Serve with your favorite sauce or pasta.

Notes

  • Best served immediately, but can be stored in the refrigerator for up to three days.
  • These meatballs can also be frozen for future meals.
