- 1 cup cooked lentils
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped parsley
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mash the cooked lentils with a fork or potato masher.
- Add breadcrumbs, parmesan, egg, garlic, Italian seasoning, salt, pepper, and parsley. Mix until well combined.
- Form the mixture into meatballs and place them on a baking sheet.
- Drizzle with olive oil and bake for 20-25 minutes until golden.
- Serve with your favorite sauce or pasta.
Notes
- Best served immediately, but can be stored in the refrigerator for up to three days.
- These meatballs can also be frozen for future meals.
