A delicious vegan twist on the classic tiramisu using ube for a unique flavor.

Ingredients

  • 1 cup ube halaya
  • 1 cup coconut cream
  • 1/2 cup almond milk
  • 1 cup ladyfingers
  • 1/2 cup brewed coffee
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a bowl, mix ube halaya, coconut cream, almond milk, maple syrup, vanilla extract, and salt until smooth.
  2. Dip ladyfingers in brewed coffee quickly, then layer them in a serving dish.
  3. Spread half of the ube mixture over the ladyfingers.
  4. Add another layer of dipped ladyfingers and top with the remaining ube mixture.
  5. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For extra flavor, add a sprinkle of cocoa powder or crushed nuts on top before serving.
