A hearty vegan nut roast that’s perfect for any dinner table.

Ingredients

  • 1 cup mixed nuts
  • 1 cup breadcrumbs
  • 1 carrot, grated
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked lentils
  • 2 tablespoons soy sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup nutritional yeast
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté the onions and garlic until translucent.
  3. In a large bowl, combine all ingredients.
  4. Transfer the mixture to a lined loaf pan.
  5. Bake for 45 minutes or until golden brown.
  6. Let it cool before slicing.

Notes

  • You can substitute the mixed nuts with seeds for a nut-free version.
  • Serve with a side of gravy or cranberry sauce.
