- 1 cup mixed nuts
- 1 cup breadcrumbs
- 1 carrot, grated
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup cooked lentils
- 2 tablespoons soy sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 cup nutritional yeast
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, sauté the onions and garlic until translucent.
- In a large bowl, combine all ingredients.
- Transfer the mixture to a lined loaf pan.
- Bake for 45 minutes or until golden brown.
- Let it cool before slicing.
Notes
- You can substitute the mixed nuts with seeds for a nut-free version.
- Serve with a side of gravy or cranberry sauce.
