- 1 cup raw cashews, soaked
- 1/2 cup canned coconut milk
- 1/4 cup maple syrup
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup dragon fruit puree
- 1/2 cup granola or almond crust
Instructions
- Preheat your oven to 350°F (175°C).
- Blend the soaked cashews, coconut milk, maple syrup, lemon juice, and vanilla extract until smooth.
- Fold in the dragon fruit puree until well combined.
- Press the granola or almond crust into the bottom of a baking dish.
- Pour the cheesecake mixture over the crust and smooth it out.
- Bake for 25-30 minutes, then let it cool before refrigerating for at least 4 hours.
- Slice into bars and serve chilled.
Notes
- Use fresh dragon fruit for more vibrant color.
- These bars can be stored in the refrigerator for up to a week.
