These vegan dragon fruit cheesecake bars are a delicious and colorful dessert that is both healthy and easy to make.

Ingredients

  • 1 cup raw cashews, soaked
  • 1/2 cup canned coconut milk
  • 1/4 cup maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup dragon fruit puree
  • 1/2 cup granola or almond crust

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend the soaked cashews, coconut milk, maple syrup, lemon juice, and vanilla extract until smooth.
  3. Fold in the dragon fruit puree until well combined.
  4. Press the granola or almond crust into the bottom of a baking dish.
  5. Pour the cheesecake mixture over the crust and smooth it out.
  6. Bake for 25-30 minutes, then let it cool before refrigerating for at least 4 hours.
  7. Slice into bars and serve chilled.
