  • 1 cup crushed graham crackers
  • 4 tablespoons unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup diced Turkish delight (rose or lemon flavored)
  • 1/2 cup chopped pistachios, for garnish

Instructions

  1. In a medium bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are evenly coated.
  2. Divide the mixture evenly among 6 small cups or ramekins, pressing down to form a crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  4. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  7. Fold in the diced Turkish delight, being careful not to break it up too much.
  8. Spoon the cheesecake mixture into the prepared cups over the graham cracker crusts, smoothing the tops.
  9. Refrigerate the cheesecake cups for at least 4 hours, or until set.
  10. Before serving, sprinkle the tops with chopped pistachios for garnish.

Notes

  • For a lighter version, substitute half of the cream cheese with Greek yogurt.
