Ingredients

  • 4 large russet potatoes
  • 1/4 cup truffle oil
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the potatoes, then cut them into thin fry shapes.
  3. Soak the potato fries in water for at least 30 minutes, then drain and pat dry.
  4. Toss the fries in a large bowl with truffle oil, salt, and black pepper.
  5. Spread the fries in a single layer on a baking sheet.
  6. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  7. Remove from the oven and immediately sprinkle with grated Parmesan and chopped parsley.
  8. Serve hot and enjoy!
