- 4 trotters cleaned
- 2 onions quartered
- 3 carrots chopped
- 4 cloves garlic crushed
- 1 bouquet garni
- 10 cups water
- Salt to taste
Instructions
- In a large pot, combine trotters, onions, carrots, garlic, bouquet garni, and water.
- Bring to a boil, then reduce heat and simmer for 3-4 hours.
- Skim any foam that forms on top.
- Once cooked, strain the broth through a fine sieve.
- Season with salt to taste.
- Let cool and store for later use.

- This broth can be used as a base for traditional cassoulet.
- Freezes well for future use.
- Enhance flavor by adding more herbs if desired.
