Instructions
- In a large bowl, combine grated carrots, chickpeas, raisins, and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, cumin, cinnamon, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Let the salad sit for at least 15 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature.
