- 8 ounces mushrooms, sliced
- 1 pound leafy greens (e.g., bok choy)
Instructions
- In a large pot, combine beef broth, beef tendon, ginger, and soy sauce. Bring to a boil.
- Add carrots and onion, and reduce heat to simmer for 2-3 hours until tendon is tender.
- Stir in mushrooms and cook for an additional 10 minutes.
- Add leafy greens and green onions just before serving.
- Serve hot with rice or noodles.
