- 2 medium sweet potatoes, peeled and cubed
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon cayenne pepper
- 1/2 cup buttermilk
- 1 large egg
- 1/4 cup chopped green onions
- Oil for frying
Instructions
- Boil sweet potatoes until tender, then mash and let cool.
- In a large bowl, mix cornmeal, flour, baking powder, salt, sugar, and cayenne pepper.
- In another bowl, whisk together buttermilk, egg, and cooled mashed sweet potatoes.
- Combine wet and dry ingredients, then fold in green onions.
- Heat oil in a deep fryer or heavy skillet.
- Drop spoonfuls of batter into hot oil, frying until golden brown on all sides.
- Drain on paper towels.
Notes
- Serve with cinnamon butter for dipping.
- Adjust the heat by adding more or less cayenne pepper.
