Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/4 cup chopped green onions
  • Oil for frying

Instructions

  1. Boil sweet potatoes until tender, then mash and let cool.
  2. In a large bowl, mix cornmeal, flour, baking powder, salt, sugar, and cayenne pepper.
  3. In another bowl, whisk together buttermilk, egg, and cooled mashed sweet potatoes.
  4. Combine wet and dry ingredients, then fold in green onions.
  5. Heat oil in a deep fryer or heavy skillet.
  6. Drop spoonfuls of batter into hot oil, frying until golden brown on all sides.
  7. Drain on paper towels.

Notes

  • Serve with cinnamon butter for dipping.
  • Adjust the heat by adding more or less cayenne pepper.
