A delicious turkey roulade filled with spinach and cranberry, perfect for any festive occasion.

Ingredients

  • 2 pounds turkey breast, boneless and skinless
  • 1 cup fresh spinach, chopped
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the spinach, cranberries, cream cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  3. Place the turkey breast between two sheets of plastic wrap and pound it to an even thickness.
  4. Spread the spinach mixture over the turkey, leaving a small border.
  5. Roll the turkey tightly and secure with kitchen twine.
  6. Brush the roulade with olive oil and season with salt and pepper.
  7. Place in a roasting pan and bake for 25-30 minutes or until cooked through.
  8. Let rest for 10 minutes before slicing and serving.
