- 2 pounds turkey breast, boneless and skinless
- 1 cup fresh spinach, chopped
- 1/2 cup dried cranberries, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the spinach, cranberries, cream cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper.
- Place the turkey breast between two sheets of plastic wrap and pound it to an even thickness.
- Spread the spinach mixture over the turkey, leaving a small border.
- Roll the turkey tightly and secure with kitchen twine.
- Brush the roulade with olive oil and season with salt and pepper.
- Place in a roasting pan and bake for 25-30 minutes or until cooked through.
- Let rest for 10 minutes before slicing and serving.
