- 2 cups corn, grilled or canned
- 1 cup cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheese (cheddar or cotija)
- 1/4 cup mayonnaise
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 tablespoon lime juice
- 2 tablespoons fresh cilantro, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine corn, cream cheese, sour cream, shredded cheese, and mayonnaise.
- Add minced garlic, chili powder, lime juice, cilantro, salt, and pepper. Mix well.
- Transfer to a serving dish and refrigerate for at least 30 minutes before serving.
- Serve with tortilla chips or veggies.
Notes
- For a spicier dip, add diced jalapeños.
- This dip can be made a day ahead for better flavor.
- Garnish with extra cilantro before serving.
