- 1/2 cup chia seeds
- 2 cups almond milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup strawberries, pureed
- 1/4 cup cream cheese
- 1/4 cup Greek yogurt
- Fresh strawberries for topping
Instructions
- In a bowl, mix chia seeds, almond milk, maple syrup, and vanilla extract. Stir well and let it sit for 10 minutes.
- After 10 minutes, stir again and then refrigerate the mixture for at least 4 hours or overnight.
- In another bowl, mix the pureed strawberries with cream cheese and Greek yogurt until smooth.
- Once the chia pudding has thickened, layer it in serving glasses with the strawberry cheesecake mixture.
- Top with fresh strawberries before serving.
Notes
- This dessert can be prepared a day in advance for better flavor.
- Feel free to adjust the sweetness according to your taste.
- Chia pudding will thicken more as it sits.
