This light and airy mousse is made using aquafaba and fresh strawberries for a delightful dessert.

Ingredients

  • 1 cup aquafaba (chickpea brine)
  • 2 cups fresh strawberries, pureed
  • 1/2 cup granulated sugar

Instructions

  1. In a large bowl, whip the aquafaba with an electric mixer until soft peaks form.
  2. Add the sugar gradually, continuing to whip until stiff peaks form.
  3. Gently fold the strawberry puree, vanilla extract, lemon juice, and salt into the whipped aquafaba until well combined.
  4. Transfer the mousse into serving dishes and chill in the refrigerator for at least 2 hours.
  5. Serve chilled, garnished with fresh strawberries if desired.
