Instructions
- In a large bowl, whip the aquafaba with an electric mixer until soft peaks form.
- Add the sugar gradually, continuing to whip until stiff peaks form.
- Gently fold the strawberry puree, vanilla extract, lemon juice, and salt into the whipped aquafaba until well combined.
- Transfer the mousse into serving dishes and chill in the refrigerator for at least 2 hours.
- Serve chilled, garnished with fresh strawberries if desired.
Notes
- This mousse can be flavored with different fruits based on preference.
- Ensure the aquafaba is from canned chickpeas or prepared from cooked chickpeas without any added salt.
