  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted

Instructions

  1. In a medium bowl, combine the mixed berries, lemon juice, granulated sugar, cornstarch, and vanilla extract. Stir gently to coat the berries and set aside.
  2. In another bowl, mix together the rolled oats, flour, brown sugar, salt, and cinnamon. Pour in the melted butter and stir until the mixture is crumbly and well combined.
  3. In a large skillet over medium heat, add the berry mixture and cook for about 5-7 minutes, stirring occasionally, until the berries start to bubble and thicken.
  4. Sprinkle the streusel mixture evenly over the berries in the skillet. Cover and reduce the heat to low. Cook for an additional 10-15 minutes, or until the streusel is golden brown and the berries are bubbly.
  5. Remove from heat and let cool for a few minutes before serving.

Notes

  • For a nutty flavor, add 1/4 cup chopped nuts (such as walnuts or pecans) to the streusel mixture.
  • For a touch of extra sweetness, serve with a scoop of vanilla ice cream or whipped cream on top.
