- 2 cups fresh spinach

- 3/4 cup water
Instructions
- Blanch the spinach in boiling water for 1 minute, then transfer to an ice bath.
- Drain and blend the spinach with water until smooth.
- In a mixing bowl, combine flour, salt, and baking powder.
- Add the spinach mixture and knead until smooth.
- Divide dough into balls and roll out into tortillas.
- Cook each tortilla on a hot skillet for 1-2 minutes per side.

- Store in an airtight container to keep fresh.
- These can be frozen for later use.
