Delicious homemade spinach tortillas that are perfect for wraps, quesadillas, or just enjoying on their own.

Ingredients

  • 2 cups fresh spinach
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3/4 cup water

Instructions

  1. Blanch the spinach in boiling water for 1 minute, then transfer to an ice bath.
  2. Drain and blend the spinach with water until smooth.
  3. In a mixing bowl, combine flour, salt, and baking powder.
  4. Add the spinach mixture and knead until smooth.
  5. Divide dough into balls and roll out into tortillas.
  6. Cook each tortilla on a hot skillet for 1-2 minutes per side.
