  • 1 tablespoon olive oil

  • 1 teaspoon cayenne pepper

  • Salt and pepper to taste
  • 1/2 cup mixed nuts (such as almonds, walnuts, and pecans), chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup red onion, finely diced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a small bowl, mix together the olive oil, smoked paprika, cayenne pepper, garlic powder, salt, and pepper. Rub this mixture over the salmon fillets.
  3. Place the salmon fillets on the prepared baking sheet and bake for 12-15 minutes, or until the salmon flakes easily with a fork.
  4. While the salmon is baking, prepare the nut salsa. In a medium bowl, combine the chopped nuts, parsley, red onion, lemon juice, olive oil, salt, and pepper. Mix well to combine.
  5. Once the salmon is done, remove it from the oven and let it rest for a couple of minutes. Serve the salmon topped with the nut salsa.
