Ingredients

  • 3 cups apple cider
  • 4 cups peeled and diced apples
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon brown sugar
  • 1 tablespoon lemon juice
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, combine apple cider, apples, cinnamon, nutmeg, and cayenne pepper.
  2. Bring to a boil, then reduce heat and simmer for 15 minutes or until apples are tender.
  3. Add brown sugar and lemon juice, and stir well.
  4. Puree the soup using a blender or immersion blender until smooth.
  5. Stir in the heavy cream and heat through before serving.

Notes

  • Adjust the level of spice to your preference by adding more or less cayenne pepper.
  • Serve with crusty bread for a complete meal.
