Deliciously sweet and buttery cornbread poppers, perfect as a side dish or snack.

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup melted butter
  • 2 large eggs
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix buttermilk, melted butter, eggs, honey, and vanilla until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Grease mini muffin tins and fill each cup about 2/3 full with batter.
  6. Bake for 12-15 minutes or until golden brown.
  7. Let cool slightly before serving.

Notes

  • For extra sweetness, drizzle with additional honey before serving.
  • These poppers can also be made ahead and reheated.
