- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup buttermilk
- 1/4 cup melted butter
- 2 large eggs
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix buttermilk, melted butter, eggs, honey, and vanilla until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Grease mini muffin tins and fill each cup about 2/3 full with batter.
- Bake for 12-15 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- For extra sweetness, drizzle with additional honey before serving.
- These poppers can also be made ahead and reheated.
