Ingredients

Instructions

  1. Preheat sous vide water bath to 140°F (60°C).
  2. Clean the lamb heart, removing any sinew or fat.
  3. Season the heart with smoked salt, garlic, and black pepper.
  4. Vacuum seal the seasoned heart with olive oil.
  5. Submerge the sealed bag in the water bath and cook for 6 hours.
  6. Remove from water bath, take out of the bag, and pat dry.
  7. Heat a skillet over high heat and sear the heart for 1-2 minutes on each side.
  8. Slice and serve warm.
