- 1 lamb heart
- 1 tablespoon smoked salt
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon black pepper
Instructions
- Preheat sous vide water bath to 140°F (60°C).
- Clean the lamb heart, removing any sinew or fat.
- Season the heart with smoked salt, garlic, and black pepper.
- Vacuum seal the seasoned heart with olive oil.
- Submerge the sealed bag in the water bath and cook for 6 hours.
- Remove from water bath, take out of the bag, and pat dry.
- Heat a skillet over high heat and sear the heart for 1-2 minutes on each side.
- Slice and serve warm.
Notes
- For an extra flavor boost, marinate the heart in your favorite herbs before sous vide cooking.
- Adjust the cooking time based on desired doneness.
