A rich and flavorful smoked rib consommé that adds depth to any dish.

Ingredients

  • 2 pounds smoked beef ribs
  • 6 cups beef stock
  • 2 carrots, chopped
  • 1 onion, chopped
  • 3 celery stalks, chopped
  • 2 bay leaves
  • 10 black peppercorns
  • 1 teaspoon thyme

Instructions

  1. In a large pot, combine smoked beef ribs, beef stock, carrots, onion, celery, bay leaves, black peppercorns, and thyme.
  2. Bring to a boil, then reduce heat and simmer for 2 hours.
  3. Remove ribs and strain the broth through a fine mesh sieve.
  4. Return the broth to the pot and continue to simmer for an additional hour to concentrate flavors.
  5. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a clearer consommé, allow it to cool completely and then skim off the fat that rises to the top.
