- 2 pounds smoked beef ribs
- 6 cups beef stock
- 2 carrots, chopped
- 1 onion, chopped
- 3 celery stalks, chopped
- 2 bay leaves
- 10 black peppercorns
- 1 teaspoon thyme
Instructions
- In a large pot, combine smoked beef ribs, beef stock, carrots, onion, celery, bay leaves, black peppercorns, and thyme.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Remove ribs and strain the broth through a fine mesh sieve.
- Return the broth to the pot and continue to simmer for an additional hour to concentrate flavors.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a clearer consommé, allow it to cool completely and then skim off the fat that rises to the top.
- Experiment with different herbs for unique flavor profiles.
