Ingredients

  • 3 pounds oxtail
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups bone broth
  • 1 tablespoon tomato paste
  • 2 sprigs thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Brown the oxtail on all sides, then remove and set aside.
  3. Add onion, carrots, and celery to the pot and sauté until softened.
  4. Stir in garlic and cook for another minute.
  5. Add back the oxtail, bone broth, tomato paste, thyme, and bay leaves.
  6. Bring to a simmer, cover, and cook on low for 4-5 hours until the meat is tender.
  7. Season with salt and pepper before serving.
