Ingredients

- 4 cups chopped rhubarb
- 2 cups granulated sugar
- 1 cup water
- 1 teaspoon vanilla extract
Instructions
- In a large saucepan, combine the water and sugar. Bring to a boil over medium heat, stirring until the sugar dissolves.
- Add the rhubarb to the pot and return to a boil. Reduce heat and simmer for about 15-20 minutes, or until rhubarb is tender.
- Stir in the vanilla extract and remove from heat.
- Allow the mixture to cool before transferring to jars. Store in the refrigerator.
