A rich fruit cake traditionally enjoyed during the Scottish New Year.

Ingredients

  • 2 cups mixed dried fruits
  • 1 cup candied peel
  • 1 cup dark brown sugar
  • 1 cup unsalted butter
  • 4 cups all-purpose flour
  • 4 eggs
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup Scotch whisky

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large bowl, cream together the butter and brown sugar.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the flour, baking powder, salt, and spices.
  5. Fold in the dried fruits, candied peel, and whisky.
  6. Pour the batter into a greased cake pan.
  7. Bake for 1 hour or until a skewer comes out clean.
  8. Allow to cool before serving.

Notes

  • Best enjoyed after aging for a few days.
  • Wrap the cake in wax paper for storage.
