- 2 cups mixed dried fruits
- 1 cup candied peel
- 1 cup dark brown sugar
- 1 cup unsalted butter
- 4 cups all-purpose flour
- 4 eggs
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup Scotch whisky
Instructions
- Preheat the oven to 325°F (160°C).
- In a large bowl, cream together the butter and brown sugar.
- Add the eggs one at a time, beating well after each addition.
- Mix in the flour, baking powder, salt, and spices.
- Fold in the dried fruits, candied peel, and whisky.
- Pour the batter into a greased cake pan.
- Bake for 1 hour or until a skewer comes out clean.
- Allow to cool before serving.
Notes
- Best enjoyed after aging for a few days.
- Wrap the cake in wax paper for storage.
