Instructions
- In a saucepan, bring vegetable broth to a boil.
- Add rolled oats, reduce heat to low, and simmer for about 5 minutes, stirring occasionally.
- In a separate pan, heat olive oil and sauté minced garlic until fragrant.
- Add chopped spinach, salt, and black pepper to the garlic and cook until wilted.
- Combine the cooked oats with the spinach mixture.
- To serve, place the mixture in a bowl, top with a poached egg, and drizzle with hot sauce if desired.
Notes
- For added flavor, substitute chicken broth for vegetable broth.
