- 1 pound fresh salmon fillets, skin removed
- 1/2 cup breadcrumbs
- 1 egg
- 1 tablespoon fresh dill, chopped
- 2 tablespoons green onion, chopped
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine the salmon, breadcrumbs, egg, dill, green onion, lemon juice, salt, and pepper.
- Mix until well combined, then form into small balls.
- Place the salmon balls on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- While the salmon balls are baking, prepare the avocado sauce.
- In a blender, combine ripe avocados, lemon juice, garlic, and salt. Blend until smooth.
- Serve the salmon balls warm with the creamy avocado sauce on the side.
Notes
- For extra flavor, add capers to the salmon mixture.
- These can be made ahead of time and frozen before baking.
