Ingredients

  • 1 pound fresh salmon fillets, skin removed
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tablespoon fresh dill, chopped
  • 2 tablespoons green onion, chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the salmon, breadcrumbs, egg, dill, green onion, lemon juice, salt, and pepper.
  3. Mix until well combined, then form into small balls.
  4. Place the salmon balls on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes or until golden brown.
  6. While the salmon balls are baking, prepare the avocado sauce.
  7. In a blender, combine ripe avocados, lemon juice, garlic, and salt. Blend until smooth.
  8. Serve the salmon balls warm with the creamy avocado sauce on the side.

Notes

  • For extra flavor, add capers to the salmon mixture.
