Instructions
- In a blender, puree the cranberries until smooth.
- In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract until well mixed.
- Gently fold in the whipped cream until smooth.
- Stir in the cranberry puree until fully incorporated.
- Spoon the mousse mixture into the mini graham cracker crusts.
- Chill in the refrigerator for at least 2 hours before serving.
