Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons purple food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon vinegar
  • 4 cups powdered sugar
  • 1 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 3 tablespoons heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, combine the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Divide the batter evenly between the two prepared pans.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  8. For the frosting, beat the butter until creamy, then gradually add the powdered sugar, vanilla extract, and heavy cream until smooth and fluffy.
  9. Once the cakes are completely cooled, frost the top of one layer, place the second layer on top, and frost the top and sides as desired.
