Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the flour and powdered sugar until well combined.
  3. Incorporate the softened butter into the mixture, blending until it resembles coarse crumbs.
  4. Add the egg yolk and cold water, mixing until a dough forms.
  5. On a lightly floured surface, roll out the dough to a thickness of about ¼ inch.
  6. Use a round cutter to create circles and gently press them into a muffin tin to shape your tartlet bases.
  7. Use a fork to poke holes in the bottoms to prevent bubbling.
  8. Bake the shells for approximately 15-18 minutes, or until they turn a light golden brown.
  9. Once baked, allow them to cool completely in the tin.
  10. In a separate bowl, whip the heavy cream until it reaches soft peaks.
  11. In another bowl, blend the cream cheese with powdered sugar until smooth and creamy.
  12. Carefully fold the whipped cream into the cream cheese mixture until fully combined.
  13. Stir in the rose water and half of the chopped pistachios, folding gently to maintain the airy texture.
  14. Fill each cooled tartlet shell with the rose pistachio cream, smoothing the tops.
  15. Sprinkle the remaining pistachios over each tartlet and, if desired, add fresh rose petals for a touch of elegance.
  16. Refrigerate the tartlets for at least 30 minutes to allow the flavors to develop and the cream to set.
