Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the cubed turnips, diced bacon, chopped onion, and red bell pepper.
  3. Pour the olive oil over the top, then add the garlic powder, smoked paprika, salt, and pepper. Mix thoroughly until all ingredients are evenly coated.
  4. Transfer the mixture onto a parchment-lined baking sheet, spreading it out in a single layer.
  5. Roast in the oven for about 25-30 minutes, stirring halfway through to ensure even cooking.
  6. While the hash is roasting, prepare your eggs in a skillet to your preference.
  7. Once the turnips are tender and the bacon has reached a crispy texture, remove from the oven.
  8. Serve the hash hot, optionally topped with your cooked eggs, and finish with a sprinkle of fresh parsley for a burst of color and flavor.
