Ingredients

  • 1 sheet puff pastry
  • 2 cups cherry tomatoes, halved
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out the puff pastry on a baking sheet.
  3. In a bowl, mix the cherry tomatoes, chickpeas, basil, olive oil, salt, black pepper, balsamic vinegar, and garlic powder.
  4. Spread the mixture over the pastry.
  5. Bake for 25-30 minutes or until the pastry is golden brown.
  6. Allow to cool slightly before slicing and serving.
