Instructions
- Preheat the oven to 375°F (190°C).
- Rub the pheasant with olive oil, salt, pepper, and rosemary.
- Wrap the bacon around the pheasant, securing with toothpicks if necessary.
- Place the pheasant in a roasting pan and roast for about 1 hour or until the internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before carving and serving.
