A traditional Scottish dessert that is rich in spices and fruits, perfect for celebrations.

Ingredients

  • 1 cup mixed dried fruits
  • 1/2 cup candied peel
  • 1/2 cup dark brown sugar
  • 1/2 cup treacle
  • 1/2 cup butter
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 tsp mixed spice
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup whiskey

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Grease and line a 9-inch round cake tin.
  3. In a saucepan, melt the butter, brown sugar, and treacle together, then allow to cool.
  4. In a large bowl, mix the flour, baking powder, salt, and mixed spice.
  5. Stir in the dried fruits and candied peel.
  6. Beat the eggs and whiskey into the cooled butter mixture, then combine with the dry ingredients.
  7. Pour the mixture into the prepared cake tin and smooth the top.
  8. Bake for 1 hour or until a skewer inserted into the center comes out clean.
  9. Let it cool in the tin for 10 minutes, then transfer to a wire rack.
  10. Store in an airtight container for a few days to enhance flavors.
