- 1 cup mixed dried fruits
- 1/2 cup candied peel
- 1/2 cup dark brown sugar
- 1/2 cup treacle
- 1/2 cup butter
- 2 eggs
- 2 cups all-purpose flour
- 2 tsp mixed spice
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup whiskey
Instructions
- Preheat your oven to 325°F (160°C).
- Grease and line a 9-inch round cake tin.
- In a saucepan, melt the butter, brown sugar, and treacle together, then allow to cool.
- In a large bowl, mix the flour, baking powder, salt, and mixed spice.
- Stir in the dried fruits and candied peel.
- Beat the eggs and whiskey into the cooled butter mixture, then combine with the dry ingredients.
- Pour the mixture into the prepared cake tin and smooth the top.
- Bake for 1 hour or until a skewer inserted into the center comes out clean.
- Let it cool in the tin for 10 minutes, then transfer to a wire rack.
- Store in an airtight container for a few days to enhance flavors.

- Best enjoyed after resting for a few days.
- Can be wrapped in marzipan and iced if desired.
