Ingredients

  • 1 cup red lentils
  • 1/2 cup water
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 jalapeño, finely chopped
  • 1/4 cup cilantro, chopped

Instructions

  1. Soak red lentils in water for at least an hour.
  2. Drain and blend with remaining water until smooth.
  3. Add turmeric, cumin, and salt to the lentil mixture.
  4. Heat olive oil in a skillet over medium heat.
  5. Pour batter onto skillet to form pancakes.
  6. Cook until bubbles form, then flip and cook until golden brown.
  7. Garnish with onion, jalapeño, and cilantro before serving.
