- 125 grams unsalted butter, softened
- 250 grams caster sugar
- 3 large eggs
- 250 grams all-purpose flour
- 2 teaspoons baking powder
- 60 milliliters milk
- 250 grams raspberry jam
- 200 grams desiccated coconut
Instructions
- Preheat the oven to 180°C (356°F) and grease a lamington tray.
- In a bowl, cream together the butter and sugar until fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Fold in the flour and baking powder, then add the milk and combine until smooth.
- Pour the batter into the prepared tray and bake for 25 minutes.
- Once cooled, cut the sponge into squares and dip in raspberry jam.
- Roll in desiccated coconut until well-coated.
- Let set before serving.
Notes
- For a variation, try using different flavors of jam.
- Keep the lamingtons in an airtight container for up to a week.
