Deliciously fluffy coconut-covered lamingtons filled with raspberry jam for a sweet treat.

Ingredients

  • 125 grams unsalted butter, softened
  • 250 grams caster sugar
  • 3 large eggs
  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 60 milliliters milk
  • 250 grams raspberry jam
  • 200 grams desiccated coconut

Instructions

  1. Preheat the oven to 180°C (356°F) and grease a lamington tray.
  2. In a bowl, cream together the butter and sugar until fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Fold in the flour and baking powder, then add the milk and combine until smooth.
  5. Pour the batter into the prepared tray and bake for 25 minutes.
  6. Once cooled, cut the sponge into squares and dip in raspberry jam.
  7. Roll in desiccated coconut until well-coated.
  8. Let set before serving.
