Ingredients

- 2 pounds rabbit meat
- 1 cup duck fat
- 1 onion, diced
- 3 cloves garlic, minced
- 1 sprig thyme
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 300°F (150°C).
- In a Dutch oven, combine rabbit meat, duck fat, onion, garlic, thyme, bay leaf, salt, and pepper.
- Cover and cook in the oven for about 3 hours, or until the rabbit is tender.
- Remove from the oven and let it cool slightly.
- Shred the rabbit meat and mix it with the fat and juices.
- Transfer the rillettes to a container and refrigerate until set.
- Serve with bread and pickles.

- Rillettes can be stored in the refrigerator for up to a week.
