A decadent French dish made from slow-cooked rabbit in rich duck fat.

Ingredients

  • 2 pounds rabbit meat
  • 1 cup duck fat
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 sprig thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a Dutch oven, combine rabbit meat, duck fat, onion, garlic, thyme, bay leaf, salt, and pepper.
  3. Cover and cook in the oven for about 3 hours, or until the rabbit is tender.
  4. Remove from the oven and let it cool slightly.
  5. Shred the rabbit meat and mix it with the fat and juices.
  6. Transfer the rillettes to a container and refrigerate until set.
  7. Serve with bread and pickles.
