- 1 cup purple sweet potato, cooked and mashed
- 2 cups all-purpose flour
- 1 cup sourdough starter
- 1/2 cup water
- 1/4 cup sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
Instructions
- In a mixing bowl, combine the mashed purple sweet potato, sourdough starter, and water.
- Add the sugar, salt, and olive oil; mix until combined.
- Gradually add the flour to form a soft dough.
- Knead the dough for about 10 minutes until smooth and elastic.
- Cover the dough and let it rise for 4-6 hours until doubled in size.
- Shape the dough into buns and place on a baking tray.
- Let the buns rise again for about 1-2 hours.
- Preheat your oven to 375°F (190°C).
- Bake for 20-25 minutes until golden brown.
- Let cool before serving.
Notes
- For a richer flavor, allow the dough to ferment overnight in the fridge.
- These buns are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
