- 1 cup protein powder
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/2 cup dark chocolate chips
Instructions
- In a food processor, blend the pistachios until finely ground.
- In a large bowl, combine the ground pistachios, protein powder, and almond flour.
- Add honey or maple syrup, melted coconut oil, and vanilla extract. Mix well until combined.
- Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Freeze the cake pops for about 30 minutes until firm.
- Melt the dark chocolate chips and dip each cake pop, then return to the parchment paper.
- Let them cool and set before serving.
Notes
- For a vegan option, substitute honey with maple syrup.
- Store in an airtight container in the fridge for up to a week.
