Ingredients

  • 5 pounds pork trotters
  • 2 gallons water
  • 2 onions, quartered
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 5 garlic cloves, crushed
  • 1 bouquet garni (thyme, bay leaf, parsley)
  • 2 tablespoons salt

Instructions

  1. Place the pork trotters in a large pot and cover with water.
  2. Add the onions, carrots, celery, garlic, bouquet garni, and salt.
  3. Bring to a boil, then reduce heat to a simmer.
  4. Cook for about 6-8 hours, skimming any impurities off the surface.
  5. Strain the broth through a fine mesh sieve, discarding solids.
  6. Return the liquid to the pot and continue to simmer until reduced to a glace consistency.
  7. Allow to cool, then refrigerate or freeze for later use.

Notes

  • For a richer flavor, you can roast the trotters before simmering.
