  • 2 pounds pork belly
  • 1 tablespoon vegetable oil
  • 1 onion, halved
  • 5 cloves garlic, smashed
  • 2 inches ginger, sliced
  • 4 cups beef broth
  • 4 cups water
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 star anise
  • 1 cinnamon stick
  • ½ pound rice noodles
  • 1 cup bean sprouts
  • 1 lime, cut into wedges
  • ½ cup fresh basil
  • ½ cup cilantro

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger. Sauté until fragrant.
  2. Add the pork belly and sear on all sides.
  3. Pour in the beef broth and water, then stir in fish sauce and sugar.
  4. Add star anise and cinnamon stick. Bring to a boil, then reduce heat and simmer for 1-2 hours.
  5. Remove the pork belly, let rest, and slice thinly.
  6. Prepare the rice noodles according to package instructions.
  7. To serve, place noodles in bowls, top with pork belly, bean sprouts, basil, and cilantro. Squeeze lime over the top.

  • For a deeper flavor, consider roasting the pork belly before adding it to the broth.
