- 2 pounds pork belly
- 1 tablespoon vegetable oil
- 1 onion, halved
- 5 cloves garlic, smashed
- 2 inches ginger, sliced
- 4 cups beef broth
- 4 cups water
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 2 star anise
- 1 cinnamon stick
- ½ pound rice noodles
- 1 cup bean sprouts
- 1 lime, cut into wedges
- ½ cup fresh basil
- ½ cup cilantro
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger. Sauté until fragrant.
- Add the pork belly and sear on all sides.
- Pour in the beef broth and water, then stir in fish sauce and sugar.
- Add star anise and cinnamon stick. Bring to a boil, then reduce heat and simmer for 1-2 hours.
- Remove the pork belly, let rest, and slice thinly.
- Prepare the rice noodles according to package instructions.
- To serve, place noodles in bowls, top with pork belly, bean sprouts, basil, and cilantro. Squeeze lime over the top.
Notes
- For a deeper flavor, consider roasting the pork belly before adding it to the broth.
- Customize toppings with jalapeños or other herbs as desired.
