- 3 pounds pork belly
- 1 cup barbecue sauce
- 1/2 cup brown sugar
- 1/4 cup honey
- 2 tablespoons smoked paprika
- 1 tablespoon black pepper
- 1 tablespoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
Instructions
- Preheat the smoker to 225°F.
- Cut the pork belly into 1-inch cubes.
- In a bowl, combine the brown sugar, smoked paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper.
- Coat the pork belly cubes with the spice mixture.
- Place the cubed pork belly in the smoker and smoke for 3 hours.
- Remove the pork belly from the smoker and toss with the barbecue sauce and honey.
- Return the pork belly to the smoker for an additional hour, saucing every 20 minutes.
- Once done, let rest for 10 minutes before serving.
Notes
- For extra flavor, consider using applewood or hickory chips for smoking.
- Allow leftovers to cool completely before refrigerating.
