  • 2 tablespoons black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika

Instructions

  1. Preheat your smoker or grill to 225°F (107°C).
  2. Cut the pork belly into 1-inch cubes.
  3. In a bowl, mix the salt, black pepper, garlic powder, onion powder, and smoked paprika.
  4. Toss the pork belly cubes in the spice mixture until evenly coated.
  5. Place the pork belly cubes on the smoker rack and cook for 2-3 hours, or until a nice bark forms.
  6. Remove from the smoker and let rest for 10 minutes.
