Delicious and chewy sugar cookie bars infused with pistachio pudding, perfect for any occasion.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 package pistachio pudding mix (3.4 oz)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract, and mix until well combined.
  4. In another bowl, whisk together the flour, pistachio pudding mix, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the white chocolate chips.
  7. Spread the dough evenly in the prepared baking pan.
  8. Bake for 25-30 minutes, or until golden brown.
  9. Let cool in the pan before slicing into bars.

Notes

  • For extra flavor, add chopped pistachios on top before baking.
  • Store in an airtight container for up to 5 days.
  • These bars can also be frozen for future enjoyment.
