  • 2 cups milk
  • 2 eggs
  • 2 tablespoons sugar

  • 1 cup diced mango
  • 1/2 cup shredded coconut
  • 1/4 cup whipped cream (optional)

Instructions

  1. In a mixing bowl, whisk together the flour, milk, eggs, sugar, salt, and melted butter until smooth.
  2. Heat a non-stick skillet over medium heat and pour in a small amount of batter, swirling to coat the bottom.
  3. Cook for 1-2 minutes or until the edges lift; flip and cook for another minute. Repeat with the remaining batter.
  4. In a separate bowl, combine the diced pineapple, mango, and shredded coconut.
  5. Fill each crepe with the fruit mixture and fold.
  6. Serve with whipped cream if desired.
