Instructions
- In a mixing bowl, whisk together the flour, milk, eggs, sugar, salt, and melted butter until smooth.
- Heat a non-stick skillet over medium heat and pour in a small amount of batter, swirling to coat the bottom.
- Cook for 1-2 minutes or until the edges lift; flip and cook for another minute. Repeat with the remaining batter.
- In a separate bowl, combine the diced pineapple, mango, and shredded coconut.
- Fill each crepe with the fruit mixture and fold.
- Serve with whipped cream if desired.
Notes
- Make sure to let the crepe batter rest for at least 30 minutes for best results.
- Try adding a touch of vanilla extract to the batter for extra flavor.
