Pineapple Cilantro Quinoa Salad

A refreshing quinoa salad with pineapple and cilantro.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup diced pineapple
  • 1/2 cup chopped cilantro
  • 1/4 cup red onion, finely chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil, then reduce heat, cover and simmer for 15 minutes.
  3. In a large bowl, combine diced pineapple, cilantro, red onion, lime juice, olive oil, and salt.
  4. Once the quinoa is cooked, fluff with a fork and let cool.
  5. Add the cooled quinoa to the pineapple mixture and stir well to combine.
  6. Serve chilled or at room temperature.

Notes

  • Quinoa can be cooked ahead of time and stored in the fridge.
  • Feel free to add other vegetables like bell peppers for extra crunch.
