Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup diced pineapple
- 1/2 cup chopped cilantro
- 1/4 cup red onion, finely chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil, then reduce heat, cover and simmer for 15 minutes.
- In a large bowl, combine diced pineapple, cilantro, red onion, lime juice, olive oil, and salt.
- Once the quinoa is cooked, fluff with a fork and let cool.
- Add the cooled quinoa to the pineapple mixture and stir well to combine.
- Serve chilled or at room temperature.
Notes
- Quinoa can be cooked ahead of time and stored in the fridge.
- Feel free to add other vegetables like bell peppers for extra crunch.
