Instructions
- Toast the slices of bread until golden and crispy.
- In a bowl, mash the avocado with lemon juice, salt, and pepper.
- Poach the eggs in simmering water until the whites are set.
- Remove the eggs and coat in panko breadcrumbs.
- Heat olive oil in a pan and fry the panko-coated eggs until golden.
- Spread the avocado mixture on toast and top with the crispy eggs.
- Season with additional salt and pepper if desired.
