- 4 pieces salmon fillets
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix panko breadcrumbs, Parmesan cheese, parsley, garlic powder, salt, and pepper.
- Place salmon fillets on a baking sheet lined with parchment paper.
- Spread Dijon mustard over each fillet.
- Press the panko mixture onto the salmon to form a crust.
- Drizzle olive oil on top of the crust.
- Bake in the preheated oven for 12-15 minutes or until salmon is cooked through and crust is golden brown.
Notes
- For extra flavor, marinate the salmon in lemon juice for 30 minutes before coating.
- Serve with a side of asparagus or a fresh salad for a complete meal.
